Wining and Dining in the Maldives ~ The Magnificent Ocaso Wine Cellar

Ocaso wine cellar

Dining in the Maldives is simply not complete without a glass of the finest wine.

Wine and food have long provided gourmands with a heavenly match for the palate, with particular flavours, aromas and styles of cuisine complemented wonderfully by the distinct notes of a select vintage – with echoes of tastes and sensations enhanced by the experience of the other. Of course, wine can also be enjoyed just as it is – you don’t need a three-course menu to indulge in the many wonderful varietals, vintages and winemaking styles found across the globe.

This is why, at The Nautilus Maldives, we’re delighted to offer our guests an incredible collection of the world’s finest wines, housed in our beautiful wine cellar at Ocaso.

Old World to New World and everything between

You don’t need to traverse seas and continents to experience the best of every unique terroir. At The Nautilus, our extensive collection spans all four corners of the globe, inviting wine connoisseurs to take myriad journeys across the winemaking world; sampling flavours, aromas and exquisite artistry from Old World to New World, from Bordeaux to Napa Valley, from Italian Franciacorta to Argentinian Malbec – all within the setting of a deluxe tropical locale.

Our collection is sourced from 18 countries, boasts vintages spanning four decades, and includes red and white varietals (with 73 superb wines from France alone), rosés, sweet wines, ports (as old as 55 years) and even 26 different Japanese sakés. And of course, we can’t forget the champagne: We’re proud to house 45 different lables of bubbly from that famous French region’s most legendary champagne houses. Think Cristal, Veuve Clicquot and that father of all champagnes, Dom Pérignon – among many others.

Expert guidance through the world’s finest

At The Nautilus, we have a team of expert sommeliers ready to treat you to tastings of every type, to take you on epicurean journeys through wine-growing regions, particular varietals and blends, flagship ranges of premium cellars – or really anything that takes your fancy. Whether you’re a seasoned connoisseur or a novice, our sommeliers delight in sharing insights and answering questions, ensuring you have an unforgettable tasting experience.

Among the endless choices on offer are our sommeliers’ top recommendations, of which the following are just a sample:

  •       Chateau d’Esclans’ Garrus is legendary in the world of luxury rosés, and this 2018 vintage does not disappoint. Considered one of the world’s best, it comes from vines nearly a century old, the wine aged in new French oak. Our sommelier describes it as a wine of “incredibly complex aromas, with subtle white stones, slate, light berries and peach character plus a hint of cream. It is full-bodied yet so light and agile, with a focused and dense centre palate.”
  •       Gaja’s Alteni di Brassica 2017 is an exceptional Sauvignon Blanc, the pride of the Piedmont region in Italy. Golden in colour, rich, vibrant and refreshing, its intense spicy notes graduate into the fruitiness of citrus, pear and nectarine, with tropical flavours on the palate.
  •       And for our pièce de résistance, we are privileged to offer the renowned Château Mouton Rothschild’s First Growth 1982. It is ranked among the world’s top five Bordeaux wines for very good reason, something only truly understood through a once-in-a-lifetime tasting experience. In the words of our sommelier, it is “fresh, stylish, seductive and charming, with the nose revealing aromas of gingerbread, mint, very ripe fruit, blackcurrant and bilberry, with notes of cinnamon, toast and mocha.”

Wine tasting wherever, whenever

You’re welcome to indulge in a tasting presented in the chic interior of the wine cellar itself – surrounded by this remarkable collection of wines and the lush greenery of the island’s flora – then order your favourites for a delicious meal at Ocaso. Or if you prefer, we’ll arrange an exclusive, bespoke wine-tasting experience with a private sommelier in the most exotic of locales on land or sea.

Imagine, for example, a champagne tasting on board a luxury yacht, the sparkling blue waters echoing the exquisite effervescence in your glass. Or how about exploring the exemplary wines of six different continents within the intimacy of your bespoke island abode, enjoying home comforts inside and a gorgeous ambience outside on your private deck?

What’s more, our chefs are always conjuring up creative food pairings to complement our exceptional range of wines – from oysters with champagne to carefully curated degustation dinners of the finest foods and drinks.
