Dining in the Maldives epitomises the best of gourmet experiences: exceptional food, outstanding service and a relaxed atmosphere – of sand, sea, sun and gentle, tropical breezes. At The Nautilus Maldives, these kinds of experiences are the order of the day, with not just one – but four – restaurants to choose from, according to your mood and preferences.
Every restaurant boasts world-class gastronomy, but each has a personality of its own; each is a delight to discover. This week, we focus on Thyme – The Nautilus’s all-day dining restaurant poised on the ocean’s edge, with a beautiful, bright, wood-clad interior that merges seamlessly with the soft sands and palm trees outside. If you’re looking for a variety of dishes both familiar and exotic, with the laidback ambience of a tropical beach house, look no further.
Below we paint a picture of what you can expect at Thyme.
- Tantalising breakfasts, available all day
At The Nautilus, breakfast is one of our favourite mealtimes; as such, we serve breakfast all day and night. At Thyme, you’re invited to kickstart the day with a nutrient-packed Aloe Wellness smoothie – a healthy blend of aloe vera pulp, honey, lemongrass leaves, wheat grass, chamomile tea and chia seeds – or perhaps enjoy a mid-afternoon champagne breakfast of Belgian Waffles, after a long, lazy lie-in.
Should you wish to venture beyond these classics, we suggest trying one of our Exotic Breakfast Journeys, inspired by flavours from across the globe, from the Middle East to Mexico, from the Philippines to Ukraine. Try a Tunisian favourite, Shakshuka, a dish of slow-poached eggs in roasted tomato accompanied by fresh pita, potato hash, crumbled feta, peppers and onion, herbs and spices. Or consider our local speciality of Maldivian Naasthaa, a mix of kulhi mas (spicy tuna), shredded coconut, green chilli, red onion, coriander leaves and griddled chapati bread.

- From light lunches to sumptuous feasts at sunset
Thyme’s menu is expansive in its range, catering to a variety of tastes, cuisines, styles and appetites. This means that there’s something to suit everyone, every age and every type of occasion.
If you’re in the mood for something light and fresh, we have beautifully prepared seafood in the freshest presentations possible: oysters, line fish carpaccio or tartare. Arabic mezze platters, signature salads, delicious Andalusian gazpacho and Vietnamese wagyu beef pho are also some of the lighter bites you can enjoy as starters, or eat together in a number of small plates.
While basking in the warm hues of sundown, tuck into one of our heartier meals. Australian lamb shank with saffron couscous, Baa Atoll grilled lobster caught by Maldivian fishermen, and a range of Asian and curry dishes – Chinese, Japanese, Maldives and Thai – wait to tease your taste buds.
- Familiar favourites and glocal fusions
If you’re craving something familiar, Thyme offers some wonderful comfort food as well. Think burgers – wagyu beef, fish of the day, chicken or vegan; bohemian club sandwiches; pastas, risottos and gnocchi dishes. And you may even discover some global and local infusions in these home comforts. For example, our Frutti di Mare Linguine feature Maldivian octopus among the mix of prawn, squid, mussels and indulgent bottarga; while homemade pelmeni – traditional Russian dumplings – are stuffed with highest-grade wagyu beef, complemented by caramelised onion, sour cream and herbs, and beef consommé.

These meals are best finished with sweet treats – that make even sweeter memories. Thyme’s choice of desserts includes a variety of indulgent chocolate creations, cakes, specialities both local and global (Maldivian coconut pastries and Chinese almond tofu pudding among them) and a range of homemade ice cream and sorbet flavours.
- Ayurvedic gourmet specialities, both healthy and creative
As previously mentioned, all food preferences are catered to, with delicious options for those desiring vegetarian, vegan or gluten-free dishes. What’s more, our partnership with award-winning destination spa Ananda in the Himalayas means that we offer a special selection of Ananda’s signature culinary creations; based on Ayurvedic principles, these meals balance the fundamental taste elements and prioritise whole foods, fresh fruits and vegetables and low amounts of fat, calories and salt.
You can expect naturally gluten-free, tasty concoctions like Roasted Vegetable Creamy Soup, combining a variety of vegetables, coconut cream, garlic and olive oil; Chukandar Ki Shami, a beetroot kebab seasoned with delicious spices and fresh coriander chutney; and even Prawn Polichattu (masala), a coconut cream-based curry served with cucumber yoghurt pachadi and jeera (cumin) rice.
