From 3 to 5 April 2026, we welcome Swiss State Chef Gregor Zimmermann for an intimate residency shaped by memory where Alpine heritage drifts into the Indian Ocean, unfolding in moments that arrive naturally and linger by choice.

Celebrated as one of Switzerland’s most trusted culinary custodians, Chef Zimmermann serves as Executive Chef of Bellevue Palace in Bern, where he cooks for presidents, royalty and international delegations. A distinguished member of Le Club des Chefs des Chefs, he has prepared tables for heads of state, including President Emmanuel Macron and European royal households. His Officier du Mérite Agricole reflects a life devoted to integrity, mentorship and excellence.

A Culinary Dialogue of Origin and Emotion
Chef Zimmermann’s cuisine resists labels. It speaks through clarity and emotion, drawing from Swiss Alpine traditions while welcoming global influence. Each dish is rooted in origin and memory, reimagined with restraint and soul. Rustic recipes are honoured for their essence while their expression evolves, allowing past and present to meet gently on the plate.

Over two unhurried evenings at Zeytoun, guests are invited to experience tasting menus that create a refined conversation between Alpine flavours and Maldivian produce. As with all dining at The Nautilus, these evenings follow no fixed script.
